Where can I find some programming examples for OnRISC devices (GPIO, I2C, WDT etc)?

There is a special repository for programming examples: OnRISC_Software

See here for information about Linux kernel.

Section "OnRISC Hardware API" of the OnRISC User Manual describes the usage of OnRISC hardware components.
